Ham and Spaghetti Casserole

Sometimes on a cold and snowy night we need something that is warm and comforting.

This casserole fits the bill and is perfect for that leftover ham you baked up for the weekend.

The size you make the casserole is very adjustable. I made this for our Monday night Dinner club and it fed 8 adults easily.

Dice a large onion, 3 stalks of celery, and about 10 large mushrooms.

Melt 1/4 cut butter in a large frying pan and saute the veggies until tender crisp.

Add 1/4 cup of flour and stir well until combined and let it simmer until it has thickened up.


Add 1 1/2 cups of heavy cream .. ( you could easily make it with light cream)

Add 3 cups of chicken stock.

Stir on Medium heat and bring to a simmer.

Add fresh ground pepper and let it simmer 10 minutes.

I don't add any salt but put it on the table.

With ham you never really know how salty the dish will be.



Add 3 cups of diced baked ham and stir to combine.

Add 1/2 grated Parmesan and 1 cup or so of frozen peas.



Cook 1 small box of spaghetti.

I've been using the smart (fibre hidden in the noodle) brand.

Spray a 9 X 13 pan with pam and lay the al dente noodles in the pan.



Pour the sauce over the noodles.


Cover with Italian Cheese blend.

Bake at 350 degrees for 30 - 45 minutes or until bubbly.

Cut into squares and serve as you would Lasagna.

  2. Mmm mm - that casserole sounds delicious. Too bad I didn't have that recipe last week - we just finished up a ham. I think it would work with chicken though too, don't you?

  3. I'm intrigued by the thought of a Monday night dinner club...can you elaborate on that a little?
    I haven't joined your walking club as I missed the beginnings of that...what a great idea though.
    Funny, at work someone has decided to organize those who are willing into accountability groups where we'll all be using pedometers as well as challenging each other to reach nutritional goals as well - I can't wait to get started.
    Being in Manitoba we're a little challenged right now for walking outdoors and I don't own a treadmill, so I'm not sure how I'll get in the steps, but going to give it my best!

    On the weather topic...we went from -3C yesterday to -27C (with windchill -40)today..outside walking is a little challenging!

  8. Really yummy looking casserole. I love casseroles. So easy and only one dish. Isn't the snow so beautiful? The kids were bugged they couldn't have a snow day but it looks like it might still be around when they get home. Have a great day.

  12. This recipe sounds like a keeper. I think that sounds like a good idea for today. I now have learned how to organize all these wonderful recipes and can pass them along. So many new ideas and recipes..

  14. Even in our warmer weather I've been searching for comfort food recipes. Mine usually involve mashed potatoes.

    Re: watching our snacking after dinner. I really try to not eat anything after 7 or 8 at the latest. I sleep better. Our tangerines are ripe so I've been trying to substitute a tangerine for my usual higher calorie afternoon snack.

    My pedometer is on, but it's only registering 2300 steps, and it's 4 pm on Wednesday....I'm glad that delicious spaghetti is not here in my house--very tempting!
