Chocolate bark with fruit and nuts

This recipe is whatever you want it to be. A few weeks ago my oven went on the "blink" ( my mom always said that and I still think it sounds kind of fun) and the part will be another week at least. I've been limping along without it but the recipe today only requires a microwave.
I went to the superstore grocery outlet and purchased the best quality callebaut chocolate. We prefer dark but they also have the milk chocolate. I put it in a glass measuring cup and drizzled a little olive oil on it to help keep it shiny.


I toasted some macadamia nuts.

I stirred together some dried cranberries and raisins.

I bought some bulk mixed nuts.

I put the chocolate in the microwave and stirred it every half minute until it was smooth and melted.

I gave it a good stir and added the other ingredients, as much as I felt the chocolate could hold.

I spread it as thinly as possible on a cookie sheet lined with parchment paper. That much chocolate gave me a full sheet of chocolate bark.

Then, I chilled it and broke it into bit size pieces and put it into zip loc bags.
Done and done.

I then had a bite size piece with a good strong cup of black coffee.

    The oven going on the "blink"...that's too funny, my Mom always said the same thing.

  6. That is one of my favourite things to make at Christmas time. It's so easy and doesn't require baking. I love the different stuff you put in it. I have always just stuck to almonds but I may have to try some new things! Looks so yummy!

    I love home-made candy. This looks simple and easy. I wish that somehow you could invent a taste thermometer on your computer and then we could poll your votes.

  8. This is also one of my favourite things to make at christmas. I save our solid milk and white chocolate easter bunnies in the freezer and pull them out at Christmas to make this. I usually put almonds and cranberries in it but last year I did broken up oreo cookies. That was really good.

    Your oven going on the Blink is a good excuse to go out for supper.
