Biscuits anyone?

Perhaps you have dinner in the oven and think to yourself . .. I wish we had some fresh rolls or bread to go with this . ..it just needs something else. If you have an hour left before dinner, these are your answer.
I've made these so many times and my family has always loved these more than the actual dinner. Take that however you want.


First of all ..
Put 1 tablespoon of yeast in a small bowl.
Add 1 tablespoon of sugar
Add 1/4 cup of warm water
While that is starting to poof . .
In a large bowl . ..
Put 5 cups of flour
1/4 cup of sugar
1 tablespoon of baking powder
1 1/2 teaspoons of baking soda
1 teaspoon of salt
Stir the dry ingredients together
Cut 1 cup of real butter into small pieces.
Add this to the dry ingredients and with a pastry blender combine it.
It should look like you have pieces of oatmeal in the flour when you are done.

Add 2 cups of buttermilk or else 2 cups of soured milk which is 2 tablespoons of vinegar in a measuring cup and filled to 2 cups with milk. (this should have been sitting a few minutes)
Also add the yeast.


Stir together just until it holds together and form into a ball.


Roll the dough out and cut out your biscuits.

Now, you might notice that this makes a lot of biscuits.
NO problem.
On one pan, put the biscuits you want to bake for dinner.
On another pan, put the biscuits you want to freeze.
Pop the pan you want to freeze in the freezer until they are frozen and then put them in a zip loc bag.
When you want to bake the frozen ones, take them out and thaw them on a cookie sheet and proceed as you would the freshly made ones.

Back to the ones you are making for dinner today . ..

Let them rise until they have doubled. I'd say about 30 - 45 minutes.

Bake them in a hot 425 degree oven for 15 minutes.

This whole recipe should make about 3 dozen.

Now, I have also made these into cinnamon rolls which were pretty tasty too.


At the end of dinner the strawberry jam usually makes an appearance on the table.

Well, I'm staying in the office to pay some bills, and then I'm outside to enjoy the weather we are promised after the fog lifts.

Update at 12:30 . . .
I took 8 biscuits out of the freezer at 10 am. We had a guest for lunch so I served them with a casserole. I ate one and the farmer ate 3 and there are none left.
Yup .. .they are tasty little morsels.

    Oh and with homemade jam...oh yum!
    It's supposed to reach +16 today so I think I will be doing something outside.

  4. Oh, my mouth is watering so bad the neighbours will think the sprinkling systems turned on !!
    I will definitely copy this recipe because Vic hates the baking powder taste in biscuits so these would be perfect... Jealous I can't eat them but I have learned to 'eat' by smelling !!! smile

    I did find some white bean flour on the week-end in Vancouver and tried baking bread with it -- I HATE the rice bread...and this is actually quite good..in fact , very good !! Vic tasted it and said it tastes a little like sour dough bread...and it has none of the strange after taste of the rice bread...I think I will incorporate the white bean flour into more of my baking!! It is not as strong 'beany flavoured' as the black bean flour.

    I do love that the uncooked ones can be frozen too.
    You put the most delicious food together. If you ever decide to open a Canadian food restaurant, the cuisine will finally catch on!

    These biscuits look wonderful!! I have been without a stove for almost two months so I am dying to do some baking. These for sure will be on the menu. Hopefully our natural gas will be installed soon. Thanks for your recipes and the great way you explain everything.

  13. yummo............biscuits and jam one of my favorite things. i have made the yeast bisuits but usually i am in such a rush that i make the biscuits with b.powder....i will have to revisit this recipe and give it a try.
    you should really right a cookbook you know......;-)

  14. Biscuits are on our menu a lot - usually with fish chowder or beans. But I have never tired yeast biscuits - I am definitely going to try this recipe.
