still thinking salads?

I make this salad all year round and I'm sure you will too once you taste how scrumptious it is. My sister in law Heidi made it for me the first time and I've loved it ever since. I've adapted it from the Best of Bridge series "The Best of the Best".
You will need a blender or a small food processor for this one . . .The ingredients for the salad itself are really simple . .
Fresh Crisp Romaine or you can do a combination of greens that are crisp
A Ripe Papaya . .(skin should be yellow) this ingredient is vital . . .without this you don't have anything to make the dressing with . .
1 Avocado (optional)
Red onion slices . . to your taste (optional)

Its the dressing that tastes really yummy . .
In your blender put
1/3 cup sugar or to taste
1/2 teaspoon dry mustard
2 teaspoon salt
2 tablespoons of the papaya seeds
1/2 cup of white wine vinegar or tarragon vinegar
1/3 - 1/2 cup of light oil . . .I used grapeseed but you can use olive or canola
2 green onions chopped up

Blend the ingredients together until the seeds are ground quite fine but you can still see them.
Put the dressing into the refrigerator until you are ready to use it. You can do this earlier in the day no problem.
Dice up all the salad ingredients . . .


Put the salad on a pretty platter, and pour the dressing on top of it . . this makes a really big salad and so if you are making it just for your family, only use as much dressing as you need and it will keep for another day.

  4. I agree with Jill...how do all your food pictures look like magazine photos? Sometimes when I'm cooking I look at what I'm doing and think...would this look like Lovella's photos if I took a picture of it?? Usually I have to admit, no. smile
    The salad looks delicious....another one for my file...gluten-free!

  7. i'm having ladies for lunch in october. this looks like a good recipe to try out on them. you know how everybody likes the ooooos and ahhhhs of a new recipe.;)......the pics look sooo good i want a liitle schmeck right off the screen!

  10. Ah, an excellent recipe for those avocados ripening on the tree outside. I think I may need to start a whole new section in my 3-ring binder of recipes called "Food by Lovella." And I guess I'll have to also buy a blender; how have I managed without one all these years?

  13. I bought papayas and avocados and made your lovely looking salad for dinner on Monday. It was big hit. Your dressing looks green in the picture, and mine came out very much orange. Interesting? Thanks for the photos, I never would have tried it if it didnt come with pictures! Definitely a keeper in this household.
