peanut butter cookies

Just a simple little post today. I woke up at 6 this morning and thought about what I wanted to post. Every once in a while. . . I'm out of material. Fellow bloggers do you have days where you lurk around other blogs for a while trying to come up with something? I even thought of tagging myself and asking a few questions . . .maybe tomorrow. Fortunately, I have already figured out that I should take pictures when I'm baking for days such as this.
There are millions of Peanut Butter cookie recipe's out there I'm sure. I've tested many of them, and they are all quite similar and so I don't think you will find anything drastically unusual about these. Well, except for adding trail mix. I was helping my friend Dorothy one day up at Sweet Dreams B&B and she had me add trail mix. I thought they looked really yummy. I have a self imposed no taste policy when I'm baking for others and only eat the spoils later. I brought a few home and Terrence and Bea happened to be hanging out here, they tested them and in the end I was left with half a cookie that I begged from Bea. She reluctantly split it in half and only then because she is such a nice girl. The half cookie taste prompted me to quickly make up a batch for myself and Terry. We have a cookie every day without fail after our lunch. So, having said all that, here is yet another Peanut Butter Cookie recipe.
Peanut Butter Cookies
1 cup of peanut butter
1 cup of butter
1 cup of brown sugar
1 cup of white sugar
2 eggs
2 cups flour
1 teaspoon or baking soda
1/4 teaspoon of salt
2 cups of trail mix or more if you want it really chunky
Cream peanut butter and butter with the sugars until very light.
Add the eggs and beat until fluffy.
Mix flour, baking soda and salt, and then add to the above mixture.
Mix in the trail mix.
I use an ice cream scoop to make nice uniform sized cookies.
Press them down with your hand or a fork.
Bake them at 350 degrees for 10 minutes or until lightly browned.
Pack up a few and go for a walk on a trail and eat them all up.
Have a great day, I'm off for my 30 minute walk. The sun is shining today which is not often lately. There are 2 eagles in the tree behind the barn. I'm going to change out of my bright red pajamas (last time they spotted me) and I'm going to try to sneak a closer picture.

  1. Hi Lovella. Those cookies sound and look really good. I'll maybe try them in the summer. We aren't allowed to send anything in the kids' lunches that have anything to do with peanuts in them so I like to bake things that can go to school. Well have a good day with the eagles. Our son Kenny is doing a science project on eagles.

    Hmmm...I wonder what almond butter cookies would taste like. Or pecan butter.
    I love peanut butter cookies! Trail mix is a great idea. Oh yum.

    Right now I am munching store bought Swedish Anna's cookies, bought because of the flavor: Blueberry Flavored Thins.
    They are about 1/8 inch thick, and so delicious!
    But not as good as home made peanut butter cookies. (sigh)

  6. Oh shoot! NUTS! Those look tempting enough to try but until I am certain about this nut allergy thing that is causing me withdrawals I will have to forgo trying this recipe. All the things I so love. Trail Mix and peanut butter. Only afew more weeks till the testing will tell all. I'm hoping my few scares was just a middle age blup! I would love to get back into that peanut butter jar. I will still copy down this recipe and pass it on to afew of my Peanut Butter lov'in friends and family. Eat one for me. Kathy
